SALSIFY Sandwich Island (Tragopogon porrifolius) Bi

Description:
An ancient vegetable with roots having a unique flavour, something akin to oysters (hence named Vegetable Oyster). Sow and grow like parsnips, perhaps leaving a few roots in the ground for its young spring leaves that can be used in salads. May also be forced under a flower pot for "chicons". In the second year the purple flowers are very attractive.

WHEN TO SOW
Late March to early May.
WHERE TO SOW
In open ground in shallow rows 30cm apart.
WHAT TO DO NEXT
When large enough to handle, thin out to 15cm apart.
MATURITY
Ready for use from October onwards.
