Description
:
An ancient and perennial vegetable. Force for asparagus like shoots early in the spring. Young leaves may be cooked as spinach and flower buds sauteed in butter. Also called Mercury or Lincolnshire spinach. Height 30cm. s/c 125
WHEN TO SOW
Sow outside in spring in shallow drills. Cover lightly with soil and make sure soil doesn't dry out. Seeds may also be sown in late summer.
WHERE TO GROW
In full sun in well cultivated and rich soil that is well drained.
CULTIVATION
For the best results, grow in well composted ground and do not allow to dry out in summer.
HARVESTING
The leaves are cooked like spinach and served with butter. The flavour is mild and the texture similar to spinach. The young shoots are cooked like asparagus and served in the same way. This is, without doubt, the best part of the Good King Henry.
