Beautiful plant with lacey green foliage. Leaves used with fish and in soups. Seeds used in pickling. Medicinal. Well drained soil in sun.

Fennel has aromatic, fine leaves, which are light green and turn dark in the autumn.
The plant has a small aromatic clustered flower and a curved, brown ribbed seed.
WHEN TO SOW
In the spring
WHERE TO SOW
In spring, when the soil is warm, in shallow drills. Cover lightly with fine soil or compost and water well. Thin seedlings and transplant to growing site when large enough to handle. Prefers good, well-drained garden soil and full sun.
HARVEST
Leaves before flowering for drying, otherwise any time. Harvest seeds when ripe.
USES
To preserve, freeze leaves or infuse in oil or vinegar. Dry the seed.
HANDY TIP
Grind 4 tbsp of fennel seeds with 2 handfuls of thyme leaves, two bay leaves and 2 gloves of garlic, add some ground black pepper and pinch of salt to make a delicious rub for any red meat.
