An erect, branched perennial herb. Toothed leaves and square stems. It is a member of the mint family, and has an anise-like aroma. The leaves are ovate-triangular, green above and with soft grey hairs below. Flowers are purple-blue, two-lipped, in a dense terminal spike 4 - 8 cm long. It blooms from June to September. It grows up to 1m tall. Bees love it, and are purported to make good honey from its pollen.

Anise Hyssop Butter Cookies:
Ingredients:

1.) 1 Cup all-purpose flour

2.) ¼ cup plus 2 tablespoons confectioners’ sugar

3.) Pinch of salt

4.) 7 ounces sweet (unsalted) butter, cold and cut into small pieces

5.) 1 teaspoon vanilla

6.) 2 tablespoons anise hyssop, minced

1.) 1 Cup all-purpose flour

4.) 7 ounces sweet (unsalted) butter, cold and cut into small pieces

5.) 1 teaspoon vanilla

Fit your food processor with the plastic blade. Add flour, sugar, and salt. Add the butter and process until ingredients are just combined, normally takes about 2 minuets. Add vanilla and anise hyssop flowers, process fpr an additional 2 minuets. Remove the doyugh from the processor and shape it into a ball. Roll it into a 1 inch thick log and wrap it with waxed paper. Refrigerate for 1 hour.

Preheat the oven at 375 ° F. Unwrap the log and slice it into ¼ inch rounds. Place cookies on a un-greased cookie sheet. Bake for 7 to 10 minuets or until lightly golden. This recipe makes about 36 cookies
