The skirret is a native of China and is certainly an ancient vegetable. The plant produces a ëbundleí of swollen edible roots which are tender and sweet and floury. Use in the same way as Salsify.

The long (30-60cm) roots have a unique flavour described as deliciously bittersweet. Quite different from anything else. Sow, grow and harvest like parsnips. Prepare for cooking by peeling, and chopping or slicing roots. Saute with other vegetables. Much smaller than Wild Burdock. Grow in clay loam soil for best roots
